Ever since I have known about the MBTI personality quiz, I have always wondered why Judging and Perceiving were left out of the functions.
Could anyone explain why?

Ever since I have known about the MBTI personality quiz, I have always wondered why Judging and Perceiving were left out of the functions.

There are. The perceiving functions are Intuition and Sensing (Ni, Ne, Si, Se). The judging functions are Thinking and Feeling (Ti, Te, Fi, Fe).

The judging/perceiving dichotomy in MBTI is used to indicate what functions you prefer. If you're a J, then your judging function is extraverted (Te, Fe) and is in either the dominant or auxiliary position. Your perceiving function will be introverted (Ni, Si).
Likewise, if you're a P, your perceiving function is extraverted (Se, Ne), and your judging function will be introverted (Ti, Fi).

It's because intuition and sensing are perceiving functions and feeling and thinking are judging functions. The fourth letter only tells you whether or not you have a judging (thinking or feeling) or perceiving (sensing or intuition) function as your strongest extroverted function (for introverts, the strongest extroverted function is in second place since they prefer introversion and thus have an introverted function as their strongest).
