In your own observation, or from study, what type would you say is the most 'emotional' of the "thinking" types? Conversely, which "Feeling type" is most "logical", and why?

I don't think it's up to type ..... it's more... who wants to be more logical?.... who has already developed their functions
I don't think you can predict something like that. However, when it comes to what kind of logic.....
I have noticed that SF's logic is often intuitive logic and NF's logic is often sensor logic. NF's often can understand the ST logic much more than an NT's logic. NF's are no doubt fascinated by the NT paradigm and can understand the intuitive part of it..... but there is just something in the thought process that makes you think.....wtf?
Likewise SF's have NT sort of logic. It may not be as intense or insightful as an NT's....but the way they learn their flashcards in school.....how they process information is largely NTish.
Some individual t types have lower t than others. I don't think it's all of one type. Also, there are things personal to the individual which may evoke more emotion - but are they more emotional in general? Probably not really.
I have heard that ENTPs are said to be the most feeling of t types. I haven't really seen it to be true in most cases. I have also seen lots of NTJ freak-outs which were very emotionally charged. I'm giggling thinking about them. Ah.
I'm going to go with 'depends on the individual.' Some t types see fit to nurture their f. Me personally, I think thats a waste of time.
There's a lot of variation among people, even those of the same type, so I don't know if there is necessarily one type that is more "emotional" than other. xSTPs can, due to their Se function, be among the more impulsive Thinkers, but at the same time, sometimes xxTJs can react even more emotionally when things don't go their way (as they tend to be more "control"-oriented than Ps).
One thing to keep in mind is that Thinking vs. Feeling doesn't necessarily have anything to do with emotion - you most certainly can have "emotional" thinkers and "emotionless" feelers. One example, from the sporting world, that I like to use to describe thinkers who feel vs. feelers who think is to contrast NY Giants head coach Tom Coughlin (ESTJ) with former Indianapolis Colts head coach Tony Dungy (INFP). These two are opposite types, but in this case it is the dominant Extraverted Thinker who is described as "emotional" - often yelling when his players make mistakes or officials make calls he disagrees with. Coughlin is using his feelings to serve logic here - he doesn't want players or officials to make the same mistake twice, and in the heat of the moment, he may decide that chewing them out is the best way to get that message across. The dominant Introverted Feeler, Tony Dungy, on the other hand, rarely has these kinds of emotional displays, perhaps because they are in conflict with his value system. Remaining calm and logical in the chaos of the football field helps Dungy to stay true to the values in which he believes.
People can rage out in anger and not have a clue why. People can be taught how to long divide, carrying the task out automatically like a parrot squawking out words it doesn't understand, but never really grasping what division is on a fundamental level.
It is developing the awareness of your weaker functions, and ultimately yourself, that sets people apart. No single type owns the patent on building self-awareness... but ENTJs perhaps have more of an natural bent toward self improvement.
