    For those of you who reading this and are curious as to what makes this recipe vegan, it's about the sugar. Vegans do not eat "white" sugar that has been refined using a charcoal filtration process. This "charcoal" is usually made of bone char - burned cow bones. Brown sugar also uses this process, it's merely white, refined sugar with molasses added.

    Most processed "table" sugar in the US is made this way. This is why vegans use products that do not use this process such as beet sugar, agave nectar, or Sugar in the Raw. Many sugar producers who do not use this process label their product with the "V" symbol indicating that it is suitable for use by vegans. Check labels, or the manufacturers website.

    Vegans do not use honey, either.

    This has been driving me crazy.... I can't seem to get my bean and lentil patties to stick together when I make them without eggs. I have tried making the mixure thicker, oats and such, but to no avail. I go to cook them and they fall right apart. So, I wondered how Vegans do it, as they don't use eggs. Any recipies could be helpfull, also. Thanks in advance.

    That makes me crazy, too.

    Suggestions:

    Refrigerate, or better - freeze the burger before cooking. They seem to hold together better that way.

    Use potato as a binder. It's nice and starchy. Just bake or microwave a whole potato and scoop out the insides.

    Bread crumbs. They'll help to absorb moisture.

    The best tip, though, is to make sure that you start out with beans that are not too moist. Don't just drain them through a colander. Spread them out on a paper towel to absorb the moisture that hides between the beans. For black bean burgers, after drying mash some of the beans, rather than using just whole beans.

    If you add a lot of veggies to the mix, cook or steam them first before adding them. This will cook out some of the moisture. Again, dry well.

    Ground flax seeds mixed with a bit of water mimic that slimy, sticky, binding consistency of eggs. Mixed with bread crumbs, they work similar to how eggs do as a binder.

    Another trick that makes for a burger that holds together well, is to put all the ingredients into a blender and grind it all up together. You'll end up with something with more the consistency of a meat burger that will hold together better. This works better with beans, rather than lentils.

    For anyone interested in a great vegan cookbook ...

    Costco now has the "Forks over Knives" cookbook that was released last year. Contains 300 vegan recipes, and includes tips such as soaking instructions and cooking times for beans, how to toast nuts and seeds, what to stock in a vegan pantry, and a metric (grams) to cups conversion chart.

    Please note that the Forks Over Knives crew doesn't use processed oils, so no olive oil. If you do use oils, you'll have to modify the recipes. This is one of the best true vegan recipe books I've found.

    Costco has it priced at $11.99 ($18.95 retail) and looks like this:

    There are at least two vegan Nutella substitutes that I have heard of.


    Justin’s Chocolate Hazelnut Butter | Vegan Spoonful (I have tried this one, and it's delicious.)

    You should do your own cookbook where you talk about your experience, what you learned, recipes, etc.

    That's my favorite vegan recipe blog, filled with awesome pictures. It's in Finnish though, but if anyone is interested to try few recipes I can translate some here. Just give a link to entry, post it here and tag my name so I know to come to translate the recipe. This girl is basically the number one vegan blogger in Finland, she has her own cookbook too. Just the pictures are definitely worth of checking out. Sinfully delicious blog.
